Place 1000gms water in jug.

place noodles in steamer basket (if using rice noodles, place in basket with 6 minutes left – be guided by packet instructions),,

Place prepared vegetables in varoma and steam for 20min.

meanwhile, grate ginger and garlic, and mix in a large bowl with soy, sesame oil and rice wine.

Fry eggs to your liking, about three minutes before steaming is done – a runny yolk is delicious mixed through the noodles.

As the eggs fry, mix the noodles and steamed vegetables through the dressing. Divide amongst plates, and top with fried eggs.

A nice touch is to serve with wedges of lemon/lime, chilli sauce or chopped chilli, and toasted sesame seed
